A classic zester is a little culinary gadget of approximately 4 inches in length and featuring a curved metal end with small holes. It is used to purge citrus fruits of their zest. Zest is removed when the zester is pressed across the fruit, but not the bitter pith beneath the skin. After that, these lengthy zest threads can be chopped into smaller pieces. Certain zesters feature a hole at the tip that can be used to cut strands of peel for toppings and beverages.

Substitutions: Numerous small, fine graters also work well for zesting citrus fruits. This item does not require cutting; it is already prepared for use in a recipe.

Tips:

  • Remove the zest and freeze if you are simply juicing fruit.
  • Similarly to graters, the number of specialty zesters has increased dramatically.
