Asadero is a semi-soft Mexican cheese. Its texture is solid and silky, and its flavor is somewhat tart. It has a mozzarella-like texture and melts beautifully. It is available in braids, loaves, and balls and has a smooth, glossy finish. It may be used in place of Monterey Jack or mozzarella cheese. Occasionally, it is referred to as Oaxaca, after the town in Mexico where it was initially manufactured. Refrigerate cheese between 35°F and 40°F. To avoid mold, wrap cheese securely in its original wrapper or container, plastic food wrap, special cheese paper, or aluminum foil.
