Arugula

Arugula is a peppery mustard-flavored salad green that is slightly bitter and aromatic. In the spring, it is offered in bunches and is frequently used in spring greens mixes.

Purchasing and Storage:

  • Look for crisp, unwilted leaves that are free of yellow leaves. Cellophane is frequently used to wrap iceberg heads. Others are packaged in plastic or are sold unwrapped. Keep in a produce bin, gently wrapped, and use within a few days. Just prior to use, wash and pat dry.
  • Tenderness is increased with smaller leaves and stalks, and some are best when young. Tender greens require only a few minutes of cooking.
  • Certain greens are particularly seasonal, and a greater selection can be obtained during summer farmer’s markets.
