Apricots are members of the peach family. It is petite, pale yellow to dark orange in color with a pink blush, and has a well-balanced flavor. Apricots feature only one pit and can easily cut in two. Apricots have a brief season, from late summer to early fall. They are consumed whole, skin and all. While many apricots are consumed as a snack, they can also be used in desserts, cobblers, or crisps. Apricots are also available in canned or dried form.

Purchasing and Storage:

  • A ripe apricot should be slightly firm, have a deep color, and be free of green. It should give slightly with gentle pressure. Apricots are delicious, juicy, and have a short shelf life when mature.
  • Apricots should be kept on the counter for a few days or in the refrigerator to prevent them from becoming too soft.
